The Bread Production Assistant Manager at Zingerman's Bakehouse is a hands-on position. The Bread Department is a high volume bakery that operates 24 hours per day, 365 days a year. We are uncompromising is our pursuit of baking high quality artisan breads and rolls. The person we're seeking will work a flexible schedule that will include working all shifts during the year and includes weekends and holidays.

  

 

 

 

 

 

What are the requirements and skills needed for this job?

Availability:

  • Weekend and Holiday availability required
  • Full availability in November and December (we don't take any extra time off during these months)
  • 50 hours per week, salaried position

Performance Expectations - Essential Functions:

  • Manage the production floor with above average proficiency in all roles
  • Hire and train new staff
  • Give constructive oral and written performance-based feedback
  • Manage scheduling and staff development
  • Manage labor and food cost
  • Make measurable and consistent improvements in food quality
  • Lead departmental huddles
  • Work with Excel file to create daily recipes, and handle add-ons
  • Attend and participate in Bread Manager meeting and bi-monthly Bakehouse Manager meeting
  • Actively participates in all aspects of bread production:
    • Prepares dough for baking including mixing and scaling
    • Hand-shapes dough
    • Prepares ingredients and does set-up work - setting up boards screens, pans, and other equipment in preparation for making each type of bread
    • Loads and unloads bread in the ovens
    • Monitors the proofing and baking of the breads
    • Works safely around hot ovens, heavy equipment, and sharp utensils
    • Keeps a clean and sanitary work area
    • Completes basic orientation passport within 90 days of hire
    • Attends and participate in Bread department and Bakehouse all-staff huddles
    • Attends and participates in Zingerman's events and activities
  • Responsible for assisting in all aspects of departmental functions.
  • Actively engage all staff daily.  
  • Will achieve a high level of competence at the ovens, mixing doughs, and shaping bread and rolls.
  • Help to train and develop staff to become better bakers.

Physical Demands:

  • Must be able to lift 50 pounds repeatedly during an 8 hour shift
  • Must stand, lift and bend for duration of an 8 hour shift
  • Must be comfortable with repetitive motion
  • Must be able to do repetitive baking
  • Must be able to work in a hot and humid environment for an 8 hour shift (82-90 degrees)

 

Success patterns for this position are:  

  • Four years of professional baking experience preferred
  • Previous supervisor or manager experience preferred

Who are we?

Zingerman's Bakehouse is a wholesale bakery, retail shop, and baking school for home bakers. We sell to specialty food stores, cafes and restaurants in southeastern Michigan as well as selling to Zingerman's Mail Order, who ships our baked goods everywhere in the United States. We are dedicated bakers and food lovers committed to making and selling the best breads, pastries and cakes we can imagine. We are real artisan bakers, meaning we use traditional methods and flavorful ingredient to make our food.

 

Where are we?

Zingerman's Bakehouse is located on the south side of Ann Arbor at 3711 Plaza Drive. While there is a bus stop within walking distance, the Bakehouse is NOT located on AATA bus route.

Who are we hiring?

The Bread Department is looking for a Bread Production Assistant Manager. Shifts are around 9-10 hours. We are looking for someone who is available to work weekends and holidays. Experience is preferred. We are looking for individuals who consider themselves active and effective followers.

What does the job pay?

Starting pay is $39,000-$42,000. Zingerman's Bakehouse has an exciting training strategy with clearly defined expectations and pay increases along the way.
