Zingerman's Roadhouse is hiring a Full-Time Butcher!  

This position is responsible for cutting, boning, tying, and grinding meats using butcher's cutlery and powered equipment. Estimates requirements and requisition on meat supply order. Oversees and teaches other line cooks who are learning or doing butchery. One year of butcher experience. Holidays, weekends, evenings & other "peak periods" are required.

Essential Functions:

  • Cuts, trims, bones, ties, and grinds meats, using butcher's cutlery and powered equipment, such as electric grinder and bandsaw, to portion and prepare meat in cooking form
  • Cuts, trims, and bones carcass sections or prime cuts, using knives, meat saw, cleaver, and bandsaw, to reduce to cooking cuts, such as roasts, steaks, chops, stew cubes, and grinding meat.
  • Cuts and weighs steaks and chops for individual servings. Tends electric grinder to grind meat. Shapes and ties roasts.
  • Estimates requirements and requisition on meat supply order. Receives, inspects, and stores meat upon delivery. Records quantity of meat received and issues to cooks. Uses yield test on every butchery task.
  • Maintains clean working environment from area used for butchering to storage area
  • Prepares fowl and fish.
  • Oversees other line cooks who are learning or doing butchery.
  • Teaches other Line cooks butchery techniques
  • Labels and rotates all meat. Inventories outside meat walkin at end of the month.
  • Produces recipes spec sheets for butchered items. Works on the line as well to remain connected to the restaurant and is trained as a rounds person for all shifts and as a relief pit master.
  • Attends weekly kitchen huddle and reports any pertinent information to rest of kitchen staff

OTHER FUNCTIONS:

  •   Performs other tasks as directed by leadership



 

 

The Success Patterns for this position are:

  • Has a minimum of 1 year of Butcher experience
  • Has a High School diploma and 2 years Culinary education, or equivalent work experience
  • Demonstrates a passion for working with food
  • Able to work weekends holidays, and evenings and other "peak periods" as required

Physical Requirements:

  •   Bending, stooping, walking, and standing for long periods at a time.
  •   Must be able to safely relocate up to 200 lbs.
